Craig, Craig, Craig.....

Where do i even begin? I have eaten your food for years. Your food on Tuscaloosa Street was to die for. The gator meat was literally as tender as a diced chicken breast. That gator po boy was one of the finest delicacies I have ever put into my mouth. BUT......

The gator meat you are serving at Big Ed's is absolutely awful. Instead of the gator po boy, this new sandwich should be called the RUBBER BAND PO BOY. It's tough and chewy (but more chewy than tough). It felt like i was eating a whoopie cushion burrito. Please, please find a new distributor or do whatever it takes to get some half-way tender gator meat.

And yes, I have tried it several times at the new location to see if it got any better. But it hasn't. Please make it right for us Craig. There are SO many folks here who love your cooking

$12 is just too dang much for the sandwich to not be perfect.

Now if the meat gets better...... I will gladly stand in line 2 or 3 times a week with $12 in hand to get one.

C'mon Craig.... hook us up.

Let me see if I have this right. Craig begins cooking again at a business n East Florence AKA Big Ed’s. Craig’s following began to reassemble due his culinary talents and selective menu. Without Craig, not much attention. Craig leaves, and the food is no longer of the same quality.

Then GFB who has been booked to play is forced to cancel by city officials and then you add in the previous quote of forum member GOAHEADMAKEMYDAY “craig ....like anybody dosent like getting screwed over”, does make one wonder.

Screwed over by who, how and why. This sounds like a place with a serious problem that no one can fix.
All I know is when I dropped by Ed's for lunch it was closed. They said they were re-working the menu and would have more "soul food" selections and less Cajun. They would re-open soon. Sounds like Craig left the building for some reason but I didn't ask so I don't know for sure if that's the case.

ok folks the setup was less than exceptable the landlord was totally miss leading , food deliveries were returned by landlord without craigs knowledge so he was chasing trucks all over town trying to retrieve product when this failed then it was reordered ,this causes anamosity product quality drops and yes there are different grades .as in any industry when you have a pizza delivered, do you say will you bring it back tomorrow ? .your product will stink and they will drop you as a customer. this really makes life hard ,how rude. what a poor business notion what kind of idiot does this? well needless to say our quality ,customer base, suppliers and the over all genera are damaged by inexperienced unprofessional idiots who are out of there league.

i didnt know you were irish!!! i just wish craig could get his s%#t together and do it again and do it right and stay away from the people who take him down the wrong road time and again.craig is a talented artist and a super chef ....oh and he's one of the nicest people you'll ever meet.i wish i had the $$ to open a place ...craig would be to busy cooking to worry about anything else.i hope you find a place soon and business is booming. seems like the last location had great potential but things were misleading and the owner was not willing to make it happen....its hard to deal dishonest people. i'll have a gator tail po bo and a bowl of gumbo...
