gl, it wouldn't happen to taste anything like Chicago pizza, would it? I recently took a trip to Chicago and ate the best pizza I've ever had in my life at Uno's. I've been craving it ever since. It was DEEP dish with a semi-thin crust & loaded. I ate one piece and was stuffed. All the ingredients, including spices and cheese, were fresh. It was delicious.

If not Stephano's, does anyone know if a restaurant in town or near here (Huntsville maybe) serves pizza like this?

mandomama, once they were in the Court St. location and had the three rooms, they were called Florence, Rome and Verona and they later added a Renaissance room where they would host parties and serve the "dignitaries" that would visit from Firenze, Italy, our sister city. There was one table that was up on a "landing", I wish I could think what it was called. But yes, the checkered table cloths and the wine bottles, I remember scraping off the candle wax from the mirrors that were placed under them every night...and "ambiance" is exactly what the intention was, so I'm so glad that you mention it! I loved working there and had my "regulars" and there was a group of servers there at the time that had been there for awhile and I fit right in with the whole atmosphere.

As for rookmasters, I'm sorry that you don't care for Stephano's and I agree that the Sheffield location's offerings are much different from the menu choices when I worked there, but I can tell you that there were people who would have taken Steve's...oops..Stephano's buffalo wings, lasagna, scatchia, cheesecake (oh but I am craving some of his chocolate chip cheese pie now!) and pizza over any in town and I, for one, have never had a better steak than his steak florentine any where in the 'states (maybe some as good, but none consistently better)!

Joy, have you tried the Old Chicago Cafe in downtown Florence? Their pizza is supposed to be Chicago style.

I forgot about the checkered tablecloths, now I really miss the old place. I think the small dining room really added to "feel" of the place.

When you say "the later years" - what years are you referencing? As for me, I think the atmosphere changed when they started having a buffet option in addition to the regular menu. While that was great for the business lunch crowd, the romantic dinner ambiance really lost something by having so many people getting up and walking around the dining room two or three times during their meals.

Then things changed once again when they went to the fast food style of service for lunch. You would pay at the register and then basically take care of yourself - refilling your own drinks, getting your own napkins, etc. The food was still wonderful, but I really didn't like that arrangement. I'd much rather have left a big tip for a server and had the feeling of eating at a sit-down style restaurant rather than a fast food place. Apparently, I wasn't the only one who felt that way: their lunch business dwindled down to a trickle after that change.

p.s. LAWGRL, you're 100 percent right about that wing sauce! And it's such a simple recipe... Cool

Monster, it's one of those sworn to secrecy, "if I told you I'd have to kill you" kind of things. Honestly, I did swear to never tell the secret or I would gladly share as I do a lot of recipes that I have/use. I'm sorry, 'guess I shouldn't have "went on" about it but I think if you truly like good wings you will realize that less is better when it comes to ingredients. How's this...everyone loves my ****tail weenies...mustard and grape jelly...no BBQ sauce, everyone loves them!

Stephanos was there for a long time and changed a lot through the years. What years did you go the most?

e, I worked there in the early '90's. So many of my memories include "we got off work at Stephano's and headed to the Brass Lantern and..."

I remember one of the bracelets he wore while he was making pizzas and stuff - the one with the little hippie bells. I can still hear them jingling in my head, to the rhythm of his work as he was making pizzas...

Yes, I remember...as for his "short self" he was always sneaking up behind me to say ridiculous things in my ear...I miss him!
I've always said that one of the best signs of Chris's persuasive abilities was the fact that neither Steve nor "Mr. Aubrey" could fire him. I remember him not showing up to work for a few days and then, upon being told he was fired, he threw his arm over Steve's shoulder and said, "You can't fire me, Steve. What would you do without me?" And he was right. And Steve didn't.

Shortly thereafter, he found himself at the hands of Mr. Aubrey, who was upset about the way that Chris "installed the trash liner." Chris smiled and said, "I'm so sorry. Would you show me how, please?" and later laughed that it was one less trash bag he had to "install" there. Big Grin

That's funny and sounds like Chris. As for Mr. Aubrey, it was always entertaining to have him teach one how to do anything. A couple of years back, Steve let me "borrow" one of the training videos which "starred" Aubrey and Barry and I will never give it back because it's so hilarious. I'll never forget the night some frat boys called the restaurant asking for Mike Hunt...Aubrey got on the microphone to announce that um...Mr. Hunt had a call and Barry finally had to tell him it was a joke as the college crowd was cracking up.
