Big Grin Here is my wifes she STOLE from Shoneys Big Grin. Also try Copy Cat Recipes. SweetPea and Tiger.
POTATO SOUP

1 qt cubed potatoes 3 cups water
2 Tbsp chopped onion
1 can clear chicken broth
Bring these 4 ingredients to a boil and simmer about 20 min. or until potatoes are tender.
ADD:
1 can cream of mushroom soup
2 cups milk
Let all ingredients simmer. Add salt and pepper as desired. Stores and freezes well.
Ruby "Thursday" Potato Cheese Soup...don't wanna get "sued" for copyright...
(Guess you can leave out the cheese to make "straight" potato soup, however, it's AWESOME with it.)

2 large russet potatoes (I use more...adjust however you want.)
2 tblsp. finely minced celery
1 tblsp finely minced onion
1 tblsp finely grated carrot (optional)
2 cup chicken stock or broth
1 teasp. salt
2 tblsp white vinegar
2 tblsp flour
1 1/2 cups milk

Ingredients to continue with cheese potato soup:
1 cup shredded cheddar cheese + extra for topping
Monterey Jack cheese shredded for topping
3-4 slices bacon cooked (or real bacon bits)

chopped green onion.

Preparing
(1)Peel/chop potatos into bite sized pieces.
Mince onion/celery into rice size pieces.
Grate carrot into similar sized pieces.
(2) Combine vegetables with chicken stock,salt, and vinegar in a large saucepan over medium heat. Bring to a boil, then lower heat.Cover. Simmer for 20 minutes.
(3) Whisk together flour and milk in a medium bowl.
(4) Remove saucpan from heat. Stir in flour mixture. Return to heat, and simmer,stiring, un-covered for 5-8 minutes, or until soup has thickened.

For Potato/Cheese soup:
After soup has thickened:
Add 1 cup cheddar cheese. Simmer until cheese has melted.

Serving:
Spoon soup into bowls. Top with shredded Monterey, cheddar, crumbled bacon, and chopped onions a desired.

Here is the baked potato soup recipe, which I got from my sister. I tried and really came good.

Ingredients:
• 12 Bacon slices
• 2/3 Cup margarine
• 2/3 Cup all-purpose flour
• 7 Cups milk
• 4 Large baked potatoes, peeled and cubed
• 4 Green onions, chopped
• 1 1/4 Cups cheddar cheese, shredded
• 1 Cup sour cream
• 1 tsp Salt
• 1 tsp Ground black pepper
How to make Baked Potato Soup:
• Place bacon slices in a large, deep skillet. Cook over medium heat till brown.
• Drain, crumble and set aside.
• In a stock pot or Dutch oven, melt the margarine over medium heat.
• Whisk in flour until smooth.
• Gradually stir in milk, whisking constantly, until thickened.
• Stir in potatoes and onions.
• Bring to a boil, stirring frequently.
• Reduce heat and simmer 10 minutes.
• Mix in bacon, cheese, sour cream, salt and pepper.
• Continue cooking, stirring frequently, until cheese is melted.
• Baked Potato Soup is ready.
