We canned some today and this is how we did it.

Peel, half and core pears. Place pears in lemon water while preparing them. Place pears in a pan and cover with water and add 1 cup sugar for each quart of water. Bring to a boil, reduce to medium heat and cook until desired tenderness. You don't want to over cook but do want to be able to easily insert fork. Place in jars and seal.
Earth, this was just a cobbler type, nothing fancy. It was 4 cups of sliced pears, add 1/2 cup sugar and heat that together on the stove until sugar is dissolved good.
Melt 1/2 stick butter/margarine in bowl. Mix together 1/2 cup of plain flour, 1 teaspoon baking powder, 1/2 cup sugar, 3/4 cup of milk...mix that together and pour over the melted butter, then pour hot pear mixture over that and bake at 400 degrees 30-35 min.
