Basic chicken salad is 2 parts chicken to one part celery with mayo. If you want to add all the other goodies, including the celery, they should not be more than one half as much as the chicken. I do use onion to taste in mine. Do not cut the ingredients too small. I hate chicken "mush". Now, my cooking hint: Do not cook the chikcen forever. Pour about one cup of water into your skillet. Make a bed of sliced onion, celery, and a carrot if you keep them. (I always have carrot, but do not rush to buy some.) Lay chicken on top and steam. In no case should you cook over 20 minutes if you are using all white meat. Your chicken will be juicy and also your salad. Many people believe the thigh meat adds more flavor. You will have to decide how or whether to mix. If there should happen to be white wine in the fridge, use one half wine for the liquid. If your fingers can take the heat, add the mayo while the chicken is warm. All these hints are my derivations from the first sentence which I have developed over the years. You know all the stuff people add, so that is your choice. Just remember there is tht place where it is fruit salad with a little chicken in it! LOL

I made some at home once and made the mistake of using canned chicken. It smelled so much like catfood, I threw it out. Never tasted a bite of it. Cat didn't want it, either.
When I Smoke a Turkey all nite on my New Smoker Grill, with either "Tonys Chachere's Seasoning" or a New Seasoning , I really like very much "Carls" after we eat our Supper from the Turkey .. I crave what is left and Make Turkey Salad ... Yummmie Yummmie so good... I do like Chicken Salad too ... Wink Chopped boiled eggs, home made sweet pickles , with some added sweet pickle juice, small amount of chopped celery, Mayo , some times a small amount of chopped apple.
Quick and easy chicken salad. Go to Sam's Club and purchase Member's Mark canned chicken breast and a bottle of Hidden Valley Ranch. In a large bowl, shred the chicken chunks into smaller pieces, add the Hidden Valley Ranch. You now have Chicken Salad...you can add grapes, pecan or almonds, pickle relish and celery or apple, to your taste but the canned chicken and ranch dressing will be the basis.
