1moremom, are you wanting to make the butter for the experience or do you just want real cow butter? If you just want cows butter, then I suggest you check out the stand smiannualchick spoke of. If you want to make it yourself, you may still want to check them out because it might be the best chance to get the milk you need.
If I may, I'd like to give you and others here some information.
First; the milk you buy in a grocery store has been homogenized unless they have an organic section. To homogenize milk is a process where the butter fat is atomized so it will not reform to a heavy cream.
Second; real whole milk from the cow has 20 to 35% butter fat depending on the breed and health oh the cow.
Third; what is called whole milk in the grocery store is 3 to 4%, the rest has been removed to make other products such as butter.
Forth; you can use just about any milk (cow, goat, etc.) as long as it still has all the natural butter fat.
Fifth; just for information, pasteurized milk has been sterilized, that's all.
The process is, let the milk sit until the butter fat rises. Skim it off and save until you have the amount you want, assuming you don't buy it all at one time.
Once you have enough, put it into a churn and go to work (I hope you have good arms.) if you don't have a churn, I can tell you other ways.

you don't need milk. if you put heavy cream in a bowl with a tight lid and shake it for a few minutes, you have butter..... i've done this so many times with my niece and nephew, i can't count them! Wink
One other suggestion...I am not really familiar with but the Valley Health Food store in FLorence is supposed to have organic stuff. If they don't have it they may someone who does.

I admire your dedication to health. Perhaps one we should all choose, lean away from convenience and toward healthy decisions. (I include myself)
