Peanut Butter Cheese Cake Minis Recipe courtesy Paula Deen

Cook Time: 20 minutes
Yield: 12 cakes

Crust:
1 1/2 cups graham cracker crumbs
4 tablespoons sugar
1/4 cup (1/2 stick) butter, melted
12 bite-size peanut butter cups
Filling:
2 (8-ounce) packages cream cheese, at room temperature
1 cup sugar
1/4 cup all-purpose flour
1 teaspoon pure vanilla extract or almond extract
2 eggs
Preheat oven to 350 degrees F. Place a paper cupcake liner in each cup of a standard muffin pan.
To make crust, in a bowl, combine graham cracker crumbs, sugar and melted butter until crumbs are moistened. Press crust into bottom of each muffin cup. Put 1 peanut butter cup into the center of each crust.
Beat cream cheese with a handheld electric mixer until fluffy. Add sugar, flour, and vanilla, beating well. Add eggs, 1 at a time, beating well after each addition. Spoon cream cheese mixture over peanut butter cups and graham cracker crusts. Bake until just set, about 20 minutes. Allow to cool completely before serving.

3. Rain. I absolutely love the rain. Let everyone else complain. You get rainbows, great sleep, and killer tomatoes for the fresh salsa I make on ball game days.
Okay, I gave you a third.

One never accomplishes anything positive by thinking negative thoughts. My father once commented on the (pardon the expression) black sheep of our family, stating if he put as much energy into hard work as he did scams, he would have been a rich man. The same goes for those who constantly criticize. Those succeed who prefer to place that energy into positive attempts in life.

I went to the eye doctor today for a regular eye check up. I got a positive good report.
Over all I must be living right. The last 2 months I've had a Good report from my heart doctor and the eye doctor.

This afternoon as me and my son were playing in the floor he looked up to me with his big ol' blue eyes and a HUGE grin on his face showing all 5 of his teeth and says... "mama". He just turned 1 and although he can talk some he's yet to say my name. Needless to say... it made my day!

Something positive is finding out your sickly little boy (the Sgt.) doesn't have anything more serious than a viral infection that is, thankfully, going away the week before going back to school.
Dinner last night at The Cheesecake Factory consisting of herb crusted salmon, mashed potatoes and asparagus. For dessert, Godiva chocolate mousse cheesecake.
Something positive is also the PHilly PHan not having a heart attack after getting the bill. Something not-so-positive is the couple of pounds I put on (I'm sure) after eating it.
