SPINACH BALLS

6 tbsp butter
2 eggs
1/2 cup finely grated Swiss cheese
1 small onion, diced
10-oz box frozen chopped spinach, thawed and squeezed dry
1/4 teaspoon nutmeg
1 cup cornbread stuffing mix

Sauté onion in butter. Combine onion and butter with remaining ingredients. Shape into small balls and freeze on cookie sheet. When completely frozen, place in plastic bag until ready to thaw for baking. Bake on ungreased cookie sheet at 350F for 15 minutes. Serve with sauce of ½ c mayonnaise and 1 teaspoon (or more) horseradish.
