I live in SW Texas and when I went to the grocery store this morning, they were roasting green chiles from Hatch, NM. We used to could only get them in El Paso.

So, I bought 4lbs in individual bags. The wife made green chile chicken enchilada casserole! OMG, it was freaking amazing with the fresh Hatch chiles and fresh grated asadado cheese on top.
I know ,I love them ,we also grilled some romas and they was so sweet , a good little side dish ,light and tasty . Wink
Picking cherry tomatoes daily now . Smiler
We planted ours in 5 gal. buckets this year and set them on our back deck , we had to ,it was the only way to keep the deer from eating them lol , nothing but woods in my backyard .
Tonight we will grill ribeyes and have tomato-bread with it. If you haven't tried it here's how....Large loaf of french bread sliced long way,,slice tomatos and cover each half of bread with a long row of tomato. Add onion and peppers if you like. Top it with your favorite cheese,,pepper-jack is good. Add some basil or any herb or spice you prefer....Oh, and garlic too.You can sprinkle garlic salt on the bread before you build the topping. Bake it in the oven or on the grill . Bread should be hot and crusty with the cheese melted. Pretty good and very easy.

Also good added to the mix is squash, okra & green tomatoes. Chop into chunks and toss with salt, pepper (red & white) sprinkle with corn meal & a little bit of flour. Heat some oil in iron skillet, brown and pop a lid on it for a little while and turn the heat down. Then remove the lid, turn up the heat and brown.
