Who told you that? There very definitely is a plural; it is "atheists." Never heard of the buffalo theorem and whatever it is will not change the fact that "atheist" does indeed have a plural form.

The hippo knows:

So does MEMIDEX:

atheist | atheists [plural] | nontheist [synonym, sense-specific] | theist [antonym, sense-specific] | atheistic [synonym, sense-specific]

For more examples of usage of this term, see the citations page. | [narrowly] A person who believes that no deities exist (especially, one who has no other religious belief). | [broadly] A person who rejects belief that any deities exist (whether or... (41 of 273 words, 6 definitions, 9 usage examples, pronunciation)

Thank you for posting that. Perhaps that will at least settle that.

too many different definitions; nothing clear-cut. one definition says an unbeliever, I assume in god.

How would we know they don't believe in God? by their fruits maybe? since we are relying on their testimony that is hearsay and they could be lying. that test fails.

I think 'by their fruits' might be logical in a determination.: let' see:

They keep the ten commandments.

Where did they come from?

By their fruits then they must be God fearing believers and the definition that they are unbelievers makes them liars.

Not really. I don't think they honor God or anything like that. If you mean people can't choose to not harm others and obey civil laws without being Christian..sorry to disappoint you. And there you go calling names that make no sense. Why does all this matter to you so much apparently?
